Tasting Notes:

The nose is French toast witha heavy hand of maple syrup and a dollop of whipped cream. The amburana influence is subdued, while the rum focuses the sweetness.

The palate is bourbon forward no doubt, but definitely emphasized with brown sugar sweetness. Its chewy, with a depth more like a honey finished whiskey before beautiful tropical fruits and complex spices.

The finish is long, perfumed, and trailing, sweet but never forgetting its charred oak foundation.

For those that arent afraid of a sweeter bourbon and interested in amburana but always find it a bit too intense, this just may be your perfect companion.

About Starlight:Starlight Distillery is a family-owned distillery in Starlight, IN. The distillery started out as a family farm in 1940. It’s had multiple evolutions over the years. In 1978, the Huber’s started their winery. Then in 2000 the Huber’s took the next step and received approval to open the distillery. Starlight is farm-focused and produces many single-origin products. I think they’re the only distillery I know that is a working farm, orchard, market, tourist destination, winery, banquet hall, and distillery!
