Amaluna is the first organic sparkling wine from Chile, produced by Emiliana using the classic fizz varieties Chardonnay and Pinot Noir. This expressive sparkling wine combines easy-drinking freshness with delicate yeasty toastiness, showcasing a vibrant palate and fine bead. The name Amaluna merges ama, meaning mother, and luna, meaning moon, evoking femininity, the mother-daughter bond, and the idea of a goddess and protector of the planet.
Emiliana is one of Chile’s most exciting producers and pioneers in organic and biodynamic winemaking. Since 1998, the winery has combined sustainable practices with the production of expressive, terroir-driven wines.
The grapes are sourced from the Casablanca Valley, influenced by cooling Pacific breezes and shallow, nutrient-poor alluvial soils with sandy loam textures. Yields are low, but the grapes ripen slowly, concentrating flavour and aroma. Hand-picked grapes are transported immediately to Emilianas Palmeras winery in Colchagua, refrigerated overnight, and pressed the following day. The juice is decanted for clarity, fermented, and then left on fine lees with weekly battonage to enhance complexity. A second fermentation using the traditional champenoise method develops the bubbles, after which the wine remains six months on its lees before disgorgement and dosage.
Chardonnay and Pinot Noir harmonise beautifully to produce a sparkling wine with a fine bead, which Emiliana refers to as rosario. Aromas of fresh pineapple and biscuity notes are complemented by subtle apricot on the palate, all lifted by crisp natural acidity inherent in the bubbles.
Pairs perfectly with mild cream sauces, raw and cooked shellfish, fresh summer salads, sushi, trout, and desserts featuring red fruits or chocolate.
