Seelbach’s Story:We often taste both bourbons and ryes of different ages and finishes, but theres just something special about the aging environment down there. The heat and humidity in Southwest GA add matured notes youd expect from a 10 to 12-year whiskey. During our blind tasting I guessed the first barrel was 8 years old it was only 5. I was way offbut we were off to a strong start.
As we worked through the lineup, I kept coming back to two standouts. I found myself torn between a rye finished with French oak staves and a unique experimental barrel bourbon. After a few rounds, there was a clear winner. Barrel #826 was an experiment from Master Distiller Graham Arthur, made from a slightly higher rye mash bill. It brought out bold herbal and eucalyptus notes – perfect for an off-profile selection.
