117 West California Single Malt was influenced by a red ale. It uses pale malt, Munich malt, and caramel maltthe wort has a reddish color as a result. The finished spirit is a beautiful gold-bronze color that displays an intriguing woody complexity on the nose reminiscent of Northern California forests followed by subtle notes of dried fruit, fresh bread, and allspice on the palette.
This native California spirit was born and raised in our home state. The barley is grown using sustainable practices in Northern California and floor-malted in Alameda, CA by Admiral Maltings. Once distilled, it is aged for just under a year in small charred American oak barrels.
