Akashi-Tai Sake Honjozo Tokubetsu. This is a lighter-bodied sake to which the sake master adds a small amount of alcohol prior to the filtering stage. This technique brings out the clean and savoury flavour elicited through the brewing process. This offers a longer and more robust finish.

On the nose it is delicate with light notes of lemon, lime and straw. The palate is refreshing with soft citrus and sweet undertones.
